Ruby Tuesday Hawaii is planning for an October opening of its sixth Ruby Tuesday restaurant in Hawaii at Kapolei Commons, which is anchored by Target and Sports Authority.

The locally-owned franchise has begun interviewing to hire about six people for the management team at the new location, with plans to hire about 100 more employees closer to the opening date.

Mark Taylor, general manager for the Ruby Tuesday restaurant at Ala Moana Center, told me that construction of the Kapolei Commons restaurant is in the early stages, with only the foundation laid at this time, but that construction is going as planned.

“We’re right where we should be,” he said.

When built, the 4,400 square-foot restaurant will also offer outdoor dining on a 1,000 square-foot lanai.

The Kapolei location is the franchise’s latest expansion, following the January opening of a restaurant in Kihei on Maui. Other Ruby Tuesday restaurants are located at Windward Mall, Moanalua Center and in Mililani.

When asked about further expansion of the Hawaii franchise, Taylor said, “We’re always looking for opportunities.”
